Autumn Tablescape with poached pear cheesecake
RECIPE
Crust
Ginger snaps biscuits, crumbled + melted butter
Poached Pear
3 pears, peeled
1 litre of water
1 cup of sugar
ginger, cinnamon sticks, cloves (optional)
Filling
1 cup of ricotta cheese
2 cup of cream cheese
1 cup of heavy cream
1 cup of powdered sugar (adjust depending on the sweetness preference)
1tsp of vanilla
Gelatin
Make the crust with the ingredients and chill it in the fridge while making the filling.
In a sauce pan, add water, sugar, and any additional flavour/spice of your preference( a piece of fresh ginger, cinnamon sticks, cloves, etc) and bring the mixture to a boil, and add pears and simmer for about 10-15min until tender.
For the filling,
1) whip heavy cream until stiff peaks
2) beat cream cheese and ricotta cheese with sugar and vanilla
Fold in whipped cream into the cream cheese, add gelatin, and pour it over the crust. Firm it up in the fridge overnight.
